Maison Gilliard: Dôle des Monts


Dôle is Switzerland's primary red blend, similar to the famed Red Bourgogne of Burgandy. Like Red Bourgogne, Dôle typically consists of at least 51% Pinot Noir and Gamay, with Pinot Noir being the dominant grape. Dôle's seductiveness lies in its balance and solidity, fruity aromas, and beautifully melted tannins. And— has been a benchmark of excellence since 1886.

Notes:

The coloring is an exquisite dark ruby red. It has a great subtle fragrance of red, ripe fruits, strawberries, and raspberries, with matching light-medium-body and soft tannins.

Pairings:

Pairings to look out for are cold cuts, filets of beef, beef fondue, braised veal, breaded schnitzel, roasted chicken, and duck breast. Of course, no Swiss wine pairing would be complete without an assortment of soft, creamy cheese.
