From the clay-molasse slopes of Peissy at 450 m, this estate Merlot showcases the power and poise of Geneva’s premier red terroir. Hand-harvested from Guyot-trained vines (60 hl/ha), the grapes are fully destemmed, cold-soaked, and fermented traditionally before ageing 15 months in high- and medium-toast barrels of four ages—balancing richness with restraint.

Bouquet: Deep garnet color with aromas of cherry, plum, and blackcurrant, lifted by red bell pepper, pine, cedar, and a touch of menthol, cocoa, and white pepper.

Palate: Smooth yet structured, with juicy red fruit, supple tannins, and a long, silky finish framed by subtle spice and cedar notes from the barrel.

Vinification: Total destemming, pre-fermentation cold maceration, and traditional cuvage, followed by 15 months in mixed-age oak barrels to enhance texture and complexity without overpowering the fruit.

Pairings: Ideal with rabbit, rosemary-rubbed lamb, spit-roasted red meat, turkey, or morel tournedos. Also pairs beautifully with mature Alpine cheeses.
