Räuschling "Stäfa"
Weingut Rebhalde – Stäfa Räuschling (AOC Zürichsee)
The Hohl family's signature expression of Räuschling — an ancient, indigenous Lake Zurich variety that nearly vanished entirely and is now one of Switzerland's most compelling viticultural treasures. This entry-level bottling draws exclusively from the estate's youngest vines, perched between 500 and 520 metres above sea level on the Lattenberg.
Bouquet: Fresh, delicate, and characteristically alpine — with crisp green apple, citrus zest, and a subtle herbal lift that speaks directly to the cool-climate character of Lake Zurich.
Palate: Light-bodied and elegantly lean, with a lively, invigorating acidity and a clean, mineral-driven finish. Aged on fine lees and bottle-matured until January for added smoothness and balance.
Vinification: 100% Räuschling. One-hour maceration on the press, spontaneously fermented in stainless steel, aged on fine lees, bottled in April, and released after further bottle maturation.
Farming: Certified Organic · Biodynamic
Pairings: A superb aperitif, and an ideal companion to lake fish, sushi, light salads, or fresh chèvre.
